Deglazing

Healthy Sautéeing onion and garlic may have a tendency to leave particles and film coating the bottom of the pan. This is actually very flavorful. While the pan is hot and it is time to add liquid whether it is broth or wine, pour a little into the pan scraping with a wooden spoon, removing this from the pan and into the broth. Not only does this clean the pan, it adds extra flavor into the broth. If you have roasted meat or vegetables in the oven, the same method can be used to remove the food stuck to the pan. This can be used as the beginning of a sauce to compliment what you have just roasted.
