7-Minute "Quick Steamed" Sweet Potatoes

Boiled Sweet Potatoes get watery and lose their flavor. I discovered that "Quick Steaming" Sweet Potatoes not only takes just 7 minutes but also enhances their flavor and preserves their nutrients. (Taken from page 437 of the 2nd Edition of the World's Healthiest Foods book.)

Prep and Cook Time: 7 minutes

Ingredients:

Directions:

  1. Fill bottom of the steamer with 2 inches of water.
  2. While steam is building up, chop or press garlic and let sit for at least 5 minutes.
  3. Cut Sweet Potatoes into 1/2-inch pieces.
  4. When water comes to a boil carefully add Sweet Potatoes. Cover steamer with a tight fitting lid and steam for 7 minutes. Sweet Potatoes are done when they are fork tender.
  5. Transfer to a bowl. For more flavor, toss Sweet Potatoes with the remaining ingredients while they are still hot. Research shows that fat-soluble vitamins and carotenoids found in foods, such s Sweet Potatoes, may be better absorbed when consumed with fat-containing foods like extra virgin olive oil.
