WHFoods Menu: Quinoa SaladSince the quinoa has already been prepared for Day 4 breakfast, this salad takes little time to prepare.
Prep and Cook Time: 0
- 1-1/2 cups cooked quinoa
- 1/2 medium onion
- 2 medium cloves garlic, minced
- 2 TBS fresh basil, chopped
- 1/2 medium tomato, diced
- 2 TBS fresh lemon juice
- 1.5 TBS extra virgin olive oil
- 1.5 cups romaine lettuce, shredded
- 1 TBS pumpkin seed, chopped
- 1/4 cup cilantro
- Mix all ingredients except lettuce and cilantro.
- Divide mixture and serve over lettuce and top with cilantro.
