Soaking and Slicing Dried Shiitakes

Rinse dried shiitakes with water. Place in a bowl with just enough hot water to cover and can be incorporated into the recipe you are making. The water adds a lot of flavor to your dish. Let mushrooms sit in the hot water for about 10 minutes or until they are soft. Squeeze out excess water and slice mushrooms up to the stem on all sides and discard the stem. It is usually too tough to eat.
