Peel ginger with a knife. Place on cutting board with the flattest side down so it doesn't roll. Slice thinly going with the grain, which runs the length of the root. Cut thin slices along the grain of the already sliced ginger. You will end up with little sticks. Then chop crosswise, and continue to chop until it is the fineness you desire. |
