Lentil Quinoa Salad
This is a perfectly balanced protein dish that can be served as a main course.
  Prep and Cook Time: 25-minutes

  • 2 cups Dry lentils
  • 4 cups Filtered water
  • 1 cup Quinoa
  • 1 cup Filtered water
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 2 Cloves garlic finely diced
  • 1 tsp Himalayan Salt
  • 1/2 tsp Oregano
  • 3 Tbsp chopped mint
  • 3 Tbsp chopped dill
  • Pepper to taste
  • 1/4 cup chopped parsley
  • 1/3 cup minced onion
  • 1 small red pepper, diced
  • 1/2 cup nicoise olives
  • 1 medium tomato, diced


  1. Boil lentils in a pot until barely tender, drain and rinse
  2. Wash quinoa to get rid of saponins, bring 2 cups of water to a boil, add in the quinoa and cook covered for 15 minutes.
  3. Prepare dressing by mixing lemon juice, garlic and oregano. Slowly drizzle in oil with a whisk
  4. Chop herbs, onion and tomatoes. Add to lentils and quinoa, add olives, add dressing, toss andadjust seasoning.
