Vegetable Spring Rolls
Stuffed with loads of vegetables and herbs, these chilled Spring Rolls are best served with sweet and sour sauce.
  Prep and Cook Time: 30-minutes

  • Roll Ingredients
  • 1 pkg Rice Paper
  • 1 cup Shredded Carrots
  • 1/2 a Cucumber - Julienned
  • 1 Cup Red Cabbage - Thinly Sliced
  • 1 Cup Micro Green Sprouts
  • 1 Ripe Avocado - peeled and sliced
  • 1/2 cup Spring Onion, sliced
  • 5 Green lettuce leaves
  • 1 Turmeric Root, finely grated
  • Sweet & Sour Sauce
  • 1 tbsp Apple cider Vinegar
  • 1 tbsp Grated Ginger
  • 4 tbsp Orange Juice
  • 1/4 cup Lemon Juice
  • 3 tbsp raw coconut aminos
  • 1/4 cup maple syrup
  • 2 tsp Mustard
  • 2 tsp coconut oil
  • Combine ingredients in a bowl and whisk together

Directions: Roll Directions

  1. Fill large bowl with warm water, dip one Rice paper in water and allow to soften approx. 5 seconds.
  2. Lay paper flat and at one edge lay 1 lettuce leaf
  3. On top of leaf: lay a small amount of Shredded carrot, cucumber, red cabbage, sprouts, spring onion, 1 slice of avocado and a bit of fresh turmeric
  4. Carefully roll up, tucking in ends while rolling Place on plate and serve with sweet and sour sauce.

  1. Combine ingredients in a bowl and whisk together
