How do you ripen apples?

Because apples produce ethylene as they ripen, they should not be stored in plastic bags or anything that restricts air flow. Oxygen is important to ripening and maintaining good quality fruit. You can leave apples at room temperature for a few days to help them ripen. Once they have ripened, cold storage at low refrigerator temperatures (35-40F/2-4C) is important to help minimize nutrient loss and preserve the apple for several weeks.
