I know it's good to avoid processed meats with nitrates/nitrites, but is it healthier to consume "naturally processed" meats that don't use nitrates/nitrites?

We don't recommend routine consumption of processed lunch meats because most products contain sodium, artificial flavors and preservatives, such as sodium nitrate and nitrite. The nitrites and nitrates, in particular, have been associated with some potential negative health concerns; therefore, we recommend eliminating these preservatives from your diet. Some natural and organic deli meats now offer low-sodium versions of lunch meat without these preservatives, which would be appropriate.
