Shrimp, Peeling and Deveining

Pull shell away from shrimp meat starting at the legs on the underside of shrimp. Remove tail if the recipe calls for it. With a sharp paring knife make a slit down the back of the shrimp about 1/8 inch deep. You may see a dark string the length of the shrimp. Rinse under cold water to remove this. It is the intestinal tract of the shrimp.
