Cabbage Soup

Using 1 tbsp of the oil, brown the meat in a frying pan. Drain and set aside. In a large stew pot or kettle, heat the remaining 1 tbsp oil. Add the onion and cook over medium heat for 1 - 2 minutes. Add the meat and the remaining ingredients. Cover and simmer over low heat 1 - 2 hrs. or until vegetables are tender. Taste and season with salt and pepper. Makes 10 servings Other things you can add if you like: A second can of kidney beans or a can of garbanzo beans for more protein and fiber. Add the following during the last 20 minutes of cooking: 1/3 cup uncooked rice or barley (increase water by one cup)
