Spinach-Polenta Bake

Thaw spinach (or, if using fresh, chop and steam until soft)and place in 8 x 8 casserole dish. Bring stock to a boil then slowly add corn meal, stirring constantly. When corn meal has absorbed all the liquid, combine with the spinach in the casserole dish. Heat olive oil in saute pan, and lightly toast minced garlic (don't burn!). Remove garlic from pan and add to casserole. Lightly saute diced onions until soft, add to casserole. Break up goat cheese, and mix well with other ingredients in casserole. Top with chopped walnuts. Bake in 350 oven for 1 hour. Serves 4.
