Celery-Leek Bisque

Melt butter in heavy soup pot over med-high. Add celery and leeks. Sauté until just softened about 4 mins. Add potatoes season lightly with a little salt and part of cayenne for 2 mins. And sauté or 3 mins. Add 4 c broth and bring to boil. Reduce heat to med-low and simmer uncovered until veggies are soft about 30 mins. Let cool slightly before pureeing in batches in blender until smooth. Return to pot Whisk in crème fraiche and remaining cayenne. Adjust seasoning. Add more broth if desired.
