Quick Confetti Stir-Fry

2 cups snow peas 1/2 a bell pepper a bunch of green onions (about 1 cup chopped) 1 medium carrot 2 cloves of garlic a bit of ginger 3 tablespoons of soy sauce 1 tablespoon of honey the juice and zest of half a lime 1 teaspoon of olive oil


  1. Chop up all the vegetables and spices first. If you have a carrot peeler, peel the carrot down to the core instead of slicing it and then cut the carrot shavings in half (so they don't get tangled up). Ginger works well grated with your average cheese grater, this will also work for the lime zest.
  2. Heat the oil in a pan and sauté the garlic, onion, and snow peas. Stir until the snow peas lose a little of their starch.
  3. Add the bell peppers. Add the soy sauce, ginger, honey, and lime juice and zest.
  4. When the peppers are almost done to your liking, throw in the carrots and stir them around.
Serve over rice or noodles.
