Chicken and Bean Salad

Rinse beans and drain well. Mix onions, peppers, cilantro, beans, salt and cumin. You can either chop all the avocado at once into small pieces, then cover with lime juice before adding to salad. Or, add about a 1/3 of an avocado per serving right before eating. If you do this, you should add the lime juice when you first make the salad. Likewise, the chicken can also be added to the salad immediately, or about a 1/2 breast can be added right before eating. I make a big batch of this salad on the weekend, and I find it stays fresher longer if you add the avocado and chicken as you eat it.
