Tomato Shrimp



Place the first five items in a baking pan. Mix 1/2 of the oil with 1/2 packet of the powdered italian dressing and sprinkle over the ingredients on the baking pan and bake in 350 degree oven for 40 minutes. Place vegetables under the broiler for 3 minutes. Let vegetables cool. Pour 1/2 of the chicken broth in a blender, add the roasted vegetables and blend smooth. Pour the remaing broth in a cooking pot and bring to boil. Add the blended ingredients and simmer for 5 minutes. Add the buttermilk, parsley and basil leaf, shrimp and simmer for another 3 minutes. Serve with toasted semilina bread. *Shrimp may be substituted with salmon or any other fish.
