Lentil Soup 2

  1. Rinse lentils.
  2. Saute onion, garlic, carrots and celery in pot with olive oil until onion becomes translucent.
  3. Pour broth into pot. Add lentils. Bring to a boil. Stir often; lentils tend to stick to bottom of pan.
  4. Reduce to simmer. Add seasoning. Cook for 1/2 hour to 45 minutes until lentils are desired consistency.
  5. Add 1/2 cup bulgur (less for thinner soup) and parsley. When bulgur is soft, the soup is done.
