  1. In a pan, stir fry the onions and garlic with 1 tbsp. of water for 3 to 4 minutes
  2. Add the remaining vegetables, herbs, bay leaf, salt and pepper then cover and continue cooking over a low heat until all are cooked(but not overcooked).
  3. Add olive oil after cooking.

    Note: If you think you have cooked a lot, just add olive oil in a serving plate so the left over in a pan will be kept for other recipes like poached eggs over ratatouille, just add anchovies or ham(optional) and chili powder, salt and pepper.
