Noah's Ark

This recipe is inspired by a Turkish desert called Noah's Ark. It is a nutritious pudding that is great for breakfast. It can be served hot or cold. This dish is very versatile and can include any combination of fruit, grains, beans and nuts. This recipe makes a large portion that can be refrigerated in small individual containers for easy breakfast throughout the week.



  1. In a large pot, bring barley to boil in 4 cups of water. When water starts to boil, turn heat to medium-low and cook for half an hour.
  2. Add the beans, chickpeas, buckwheat, spice, dried fruit, orange and orange peel, natural sweetener and 8 cups of hot water.
  3. Cook for about one hour on medium-low heat. Stir occasionally.
  4. When ready, mix in the nuts and the rose water. Let cool.
