Black Bean Soup

This soup is a very easy to make, delicious and nutritious. (Note: bean
and tomato can sizes are Canadian ... U.S. may differ, but probably close
enough)


Ingredients:

  • 1 TBS olive oil
  • 1 chopped onion
  • 1 large garlic clove, minced
  • 2 to 4 carrots, chopped
  • 1 tsp cumin
  • 2 tsp chili pepper
  • 4 cups vegetable stock
  • 2 - 14oz cans black beans well rinsed and drained
  • 1 cup fresh or frozen corn kernels
  • 1 - 28oz can diced tomatoes

Directions:


  1. Blend half of the beans and all tomatoes in blender
  2. Saute first five ingredients for 2 to 3 minutes
  3. Add vegetable stock, corn, blender ingredients and chili pepper
  4. Simmer for 20 to 30 minutes

Serve with whole grain toast or biscuits
