Curry Lentil Sweet Potato Soup

I make this soup almost every week.

Ingredients:

1 pound baby carrots chopped 1 bunch of celery, sliced 1 medium onion, chopped 2 medium yams or sweet potatoes, peeled and diced 1 pound dried lentils, sorted and rinsed 2 cloves garlic, minced 3 TBSP curry powder) 3 TSP ground cumin 1/2 tsp ground pepper 2 tsp minced gingerroot 1 (14 1/2 oz) can fat-free, low sodium vegetable broth (optional)

Directions:

Combine all ingredients in a large soup pot. Add enough water to cover the vegetables. Bring to a a boil and stir then lower heat to simmer for several hours until lentils are tender.
