Black Bean Pizza

You can spread this flavourful mixture on store bought pizza crust or pita
bread. Use any leftovers for a quick lunch later.


Ingredients:
1 15oz can black beans, drained and rinsed
3 green onions, finely chopped
1 cup salsa (up to 1/2 cup more if desired)
1 cup shredded old cheddar cheese or jalapeno flavoured cheese

Directions:


  1. In a medium sized bowl combine the black beans, green onions and salsa.
  2. Spread an even layer, not too thick, over the pre-made pizza crust and
    sprinkle with cheese.
  3. Place in oven at 400F until cheese has melted.

Store any leftover bean mixture in a sealed container for later use.

(If using pita bread be sure to oven toast the pita until it has dried out
a bit, or is just crispy, as the salsa makes the mixture wet and will slowly
soak through the bread.)
