Greens and Beans

From Charles:

3 to 4 bunches of mustard greens
1 can Cannellini(white kidney) beans
4 to 6 cloves of garlic
1 tsp black ground pepper
1 tsp salt
4 to 6 TBS extra virgin olive oil


  1. Place greens in large 4 qt pot.
  2. Pour boiling water over them and boil them until tender.
  3. Drain in collander saving some of the juice and set aside.
  4. In skillet sautee garlic and olive oil.
  5. When garlic begins to brown add beans and stir well making sure the beans, garlic and olive oil are mixed well.
  6. Pour this mixture into the greens and mix the greens and beans.
  7. Reheat if necessary and serve.

Variations: can add and onion and sautee it along with the garilic and olive oil.

If more beans are desired increase olive oil and garlic.

Crushed hot red pepper goes well if one likes it spicy.

Serve with chunk of Italian bread and a glass of your favorite red wine.
