Chocolate Covered Apricots with Almonds

These chocolate covered delights are not too sweet and each have a surprise

inside.

Ingredients:

Directions:

  1. Carefully with a knife cut into the dried apricots and push one whole almond into each. Press the dried apricot together to close the opening.
  2. Melt the chocolate carefully either over a water bath on the stove or in the microwave. Stir until completely melted.
  3. Prepare a cookie tray and cover with waxed paper. With a large fork (or two)dip each filled apricot into the melted chocolate. Tap the fork on the edge of the chocolate bowl to drip off excess chocolate. Place chocolate covered apricot onto the waxed paper on the cookie tray. Repeat with the rest of the apricots.
  4. Place cookie tray into the freezer until firm. Afterwards remove from waxed paper and place in an air tight container in fridge. Eat at your leisure.
