Veggie Quesedillas

Note: I try to use mostly organic ingredients.



  1. In a medium bowl mix beans, corn, pepper, red onion, green onion, tomato, and green chiles. Set aside.
  2. Put a large skillet/fry pan sprayed lightly with cooking spray on a large stove burner (med-high heat).
  3. Place one tortilla on the pan. Sprinkle desired amount of cheese over the tortilla. Then spoon an even layer of vegetable mixture over top of the cheese. Now sprinkle more cheese overtop of the vegetable mixture and cover with another tortilla.
  4. Cook on each side approximately 3-5 minutes or until cooked/heated well enough on each side. To flip torilla over place baking sheet on top of the pan and then turn upside down. Then slide uncooked side from baking sheet back into the pan.
  5. Repeat steps 3 and 4 until you have used up the mixture. Should make at least 3 full quesadillas.
Serve with salsa, guacamole, sour cream, refried beans and rice.
