Healthy Dessert Pancakes

(Serves 4)


  • 4 oz Wholegrain or wholemeal flour
  • 1 organic egg - med or large
  • Soy milk
  • Dried fruit or fresh fruit


  1. Place flour in a bowl and break egg in centre. Add enough Soy Milk a bit at a time and mixing well until mixture is the consistency of thick cream - eat well once consistency is reached until small bubbles appear on the surface of the batter.
  2. Heat small amount of olive oil in a frying pan, place approx 5-6 dessert spoons of batter in hot pan and spread out as thinly as possible. If using dried fruit, sprinkle a handful on uncooked side. Turn over when pancake surface seems solid and is cooked adequately underneath (Takes about a minute) and then cook other side.
  3. Stack pancakes on a plate until all are cooked and keep warm.
  4. Dried fruit pancakes should be rolled up and served with a drizzle of maple syrup. Fresh fruit pancakes should be rolled up inside plain pancakes and placed under a medium grill for a minute or two to soften the fruit (Ideal fresh fruits are soft berry fruits such raspberries, strawberries, etc).
  5. Serve with soy yogurt or maple syrup.
