A Day of Healthy Eating

Ingredients:
Breakfast:

  • 2 slices whole wheat bread toasted; top with strawberry jam; 1 cup of decaffeinated tea.


Lunch:

  • 7 pieces Vinta crackers (8 different grains and seeds);1 apple; 1 glass of orange juice.


Snack:

  • 1 TBS raisins and 1 TBS walnuts



Dinner: Stir fry for 10 minutes only

  • 1/2 pkg firm tofu
  • 1 cup of broccoli
  • 4 dry Chinese mushrooms(soak in water for 25 minutes)
  • 1/2 cup of carrots thinly sliced
  • 1/2 cup of hot water
  • 2 TBS of canola oil
  • 1 glove garlic
  • 1 shallot sliced
  • 1 tsp corn starch
  • 1/4 cup water
  • pinch of salt and sugar (optional)


Directions:


  1. On medium heat, fry tofu on all sides for 4 minutes using 2 TBS of oil. Remove tofu to a plate.
  2. Using the oil remaining in the pan to stir fry garlic, shallots for 1 minute.
  3. Gradually add in broccoli, carrots, mushroom, hot water, pinch of salt and sugar (optional) and cover and cook for another 5 minutes. Pour the stir fried vegetables on top of the tofu and serve hot.

This is not only healthy but it helps to loose some weight or maintain your weight.
