Rice, Millet & Pepper Salad


Ingredients:

  • 100g cooked brown rice, cooled
  • 100g cooked millet, cooled
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 2 or 3 sticks of celery, diced
  • 50g almonds, chopped
  • 3 tbsp currants
  • 3 tbsp parsley, finely chopped
  • 3 tbsp mint, finely chopped

    Dressing:
  • 1/4 cup cold pressed extra virgin olive oil
  • 1/8 cup lemon juice
  • ground pepper

Directions:


  1. Combine all the salad ingredients in a bowl
  2. Mix dressing ingredients together
  3. Pour over the salad and mix well

Refrigerates well.
