Gingered Tofu

Gingered Tofu may be used as a topping on salads or as a sandwich filling.



Heat olive oil on medium in saucepan. Add onion and ginger, sauté for 2-3 minutes. Add tofu and mash with fork, (consistency will be like scrambled eggs or flaked tuna). Add Bragg's or soy sauce, stirring often. Add a bit of water if mixture is drying up and sticking to pan. Cook on medium for another 5-10 minutes. Let cool and refrigerate in an airtight container (preferably glass) for a few hours before using. Use within 3 days.
