Gingered Tofu

Gingered Tofu may be used as a topping on salads or as a sandwich filling.


  • ½ pack of tofu (medium or firm)
  • 1 Tbsp olive oil
  • 1-2 Tbsp fresh chopped ginger
  • 1 chopped onion
  • 1-2 Tbsp Bragg's or soy sauce (Bragg's can be found at most health food stores or at the health food section of some grocery stores)

Heat olive oil on medium in saucepan. Add onion and ginger, sauté for
2-3 minutes. Add tofu and mash with fork, (consistency will be like scrambled
eggs or flaked tuna). Add Bragg's or soy sauce, stirring often. Add a
bit of water if mixture is drying up and sticking to pan. Cook on medium for
another 5-10 minutes. Let cool and refrigerate in an airtight container
(preferably glass) for a few hours before using. Use within 3 days.
