Cranberry Gelatin Salad


Ingredients:

  • pound fresh or frozen cranberries
  • cup small chop walnuts
  • cup large chop celery
  • 1 small can crushed pineapple
  • 2 small pkg orange low sugar gelatin
  • 4 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 cup boiling water
  • 2 cup cold water

Directions:


  1. Using a food processor or blender, chop the cranberries and celery.
  2. Bring 2 cups water to boil.
  3. Place two pkg orange gelatin in medium mixing bowl and add two cups boiling water.
  4. Dissolve gelatin then add two cups cold water, mix.
  5. Add nuts, lemon juice, zest, crushed pineapple, celery and cranberries.
  6. Mix all ingredients together, place in jello mold or small containers for traveling or bowl and refrigerate overnight.

Note: Buy a larger bag of fresh cranberries and freeze the unused portion in smaller quart sized bags for future use. They freeze well.
