Pico de Gallo Chicken


  • 1 head of cabbage chopped
  • 1/2 onion chopped
  • 2 cloves garlic minced
  • 1/2 cup of chopped green/yellow/red peppers
  • 1/2 cup salsa "watch the surgar level
  • 1/2 cup of pico de gallo
  • 4 chicken breasts
  • 1/2-3/4 cup of chicken broth
  • 3 slices of swiss cheese
  • 2 tablespoons of olive oil
  • salt and pepper to taste


  1. in a large skilled saute chicken in oil, onion,garlic
  2. add cabbage, peppers, continue to saute
  3. when when these ingredients have reduced add the salsa, pico de gallo, salt and pepper to taste
  4. then take the chicken place on top of vegs, and add the chicken broth a little at a time
  5. before serving place the swiss cheese on top of the chicken, melt and serve
