Tomato Soup with Spices ( Variation of Indian Rasam)

This recipe is great for the winter as the spices in it helps with the cold, cough, sore throat ailments common at this time.


Ingredients:

  • 3-4 medium tomatoes
  • 1 tsp Black pepper
  • 1 tsp cumin
  • 1 tsp clarified butter (optional)
  • coriander leaves - a few for garnishing
  • crushed ginger - a small piece (optional)
  • salt to taste

Directions:
The totmatoes can be cooked with a cup of water in the microwave. Remove the skin and beat them in a blender. and take out all the juice leaving the seeds and squeezed out flesh behind.

Put the extracted juice + salt + ginger on the stove at low flame and let it simmer. Crush the black pepper + cumin in a coffee grinder or using a mortar and add it. The soup should be done in 10/15 mins. Garnish with coriander leaves + a teaspoon of clarified butter.
