Baked Haddock with Chick Peas, Black Olives and Sun Dried Tomatoes

From Bob:


  • lb Haddock fillets - rinsed and drained
  • cup Kalamata Olives - pitted and halved
  • cup sun-dried tomatoes - cut into small pieces
  • 1 small onion - sliced and separated into rings
  • 1 small can of chick peas - drained
  • Olive Oil
  • Salt
  • Penzey's Florida Seasoned Pepper
  • Crushed red pepper
  • Fresh Cilantro leaves - coarsely chopped


  1. Pre-heat oven to 350 F
  2. Spray baking dish and fillets with Olive oil
  3. Arrange fillets in dish in a single layer
  4. Sprinkle fish with a little salt and seasoned pepper
  5. Cover evenly with chick peas, olives, tomatoes and onions
  6. Sprinkle crushed red pepper and more seasoned pepper evenly over everything
  7. Drizzle or spray Olive oil evenly on top
  8. Bake for 15 - 20 miuntes
  9. Garnish with Cilantro leaves before serving
