Tofu Salad

Dressing and Tofu:
  1. Chop onions and mince garlic
  2. Sauté onions, tofu and garlic in vegetable broth until onions are soft. Strain liquid into a bowl.
  3. Continue to sauté tofu, garlic and onions until tofu browns, then put onto a plate.
  4. Add fish sauce, lime juice, honey, and soy sauce to liquid and stir.
  1. Roughly chop almonds or place in a food processor. Using a saucepan, roast until browned but not burned. Add sesame seeds and continue to brown. Stir constantly, and set aside.
  2. Process cilantro, mint, ginger and onion until roughly chopped. Set aside.
  3. Process cabbage, mung bean sprouts, celery until roughly chopped.
  4. Combine all ingredients in a large bowl. Add dressing, tofu, salt and pepper to taste. Toss well.
Serves 8
