Wild and Easy Spanish Rice

  1. Heat large saute pan or wok to medium and brown onions for 4 minutes
  2. Pour juice from can of tomatoes into measuring cup then fill to 2 cups with water or chicken/vegetable stock (500ml)
  3. Add liquid and tomato can contents to onions
  4. Add cup of rice
  5. Add Parmesan cheese and black pepper.
  6. Cook for about 15 minutes on medium low or until all liquid is absorbed by rice
  7. Add herbs near end to retain texture
  8. Sprinkle grated cheese on top of rice before serving
Side dish for four friends! Excellent with bbq chicken breast.
