Roasted Sweet Potato Curry

2 large sweet potatoes 3 tablespoons honey 3 tablespoons lemon juice 1 tablespoons olive oil 1 teaspoon curry powder 1 teaspoon lemon zest


Peel the potatoes and slice them into 1/4-inch rounds. Whisk the other ingredients together. Spray a flat casserole dish or baking pan with Pam. Dip the potato slices in the mixture, making sure both slides and all edges are covered. Place the slices in two layers in the pan. Pour any remaining mixture over the potatoes. Cover the pan tightly with aluminum foil and bake for 40 minutes in a 400 oven. Remove the foil and continue baking for another 20 minutes, turning the slices over after half that time for even browning. After removing the dish from the oven, keep it warm by replacing the foil. Makes 3-4 servings.
