Fresh Minted Garbanzo Salad

This is a very refreshing summer salad, and can be made in just 15 minutes. It is high in protein, and can be kept in your refrigerator for a few days getting more flavorful as it marinates. It is a quick and easy way to have the healthy benefits of beans in your diet in a light and low fat way.

Fresh Minted Garbanzo Salad Prep and Cook Time: 15 minutes



  1. Mix all ingredients except lettuce together and chill. This is best if it chills for at least 15 minutes. Serve on a bed of lettuce.
    Serves 4

Healthy Cooking Tips:

Do not add salt to this salad until it's ready to serve. The salt will draw out the water from the cucumber and dilute the flavor.
