  1. Preheat oven to 350. Place sliced onions in bottom of baking dish. Sprinkle chicken with salt and pepper and place in baking dish on top of sliced onions. Set aside.
  2. Simmer in small saucepan rest of ingredients except mushrooms and scallion tops for 10 minutes on high heat.
  3. Cut off stem from mushroom and place cap on each chicken thigh. Strain and pour sauce over chicken. Cover and bake for 1 hour.
  4. Remove from oven and place chicken with mushroom caps and onions on platter. Pour sauce back into saucepan, bring to a boil on high heat and boil for about 10 minutes to reduce. This will thicken and intensify flavor. Pour over chicken and top with scallion. Serves 4
