15 Minute Maui Style Snapper

This is a fresh and interesting dish that can be made quickly. It gives you another way to have a good tasting sauce for your fish that is healthy with a wonderful tropical taste that will make you feel like you are on Maui.

15 Minute Maui Style Snapper Prep and Cook Time: 15 minutes

1 lbs thick cut filets of snapper
1 TBS fresh lemon juice

1 TBS minced fresh ginger
cup finely minced red bell pepper
cup firm canned crushed pineapple
1 tsp finely minced jalapeno pepper or to taste
TBS chopped fresh cilantro
salt & white pepper to taste

  1. Mix together all ingredients for salsa and set aside.
  2. Preheat 10-12 inch non-stick skillet on medium high heat for 2-3 minutes. Rub 1 TBS fresh lemon juice on snapper and season with salt and pepper.
  3. Cook fish in heated skillet about 1-2 minutes on each side. Time may vary according to thickness of fish. You do not need oil or liquid for this. This is our Stove top Searing cooking method.
  4. Remove snapper from pan and top with salsa.
