Quick and Easy Summer Meals

As we move into late spring and early summer, and the number of hours of daylight increases, there always seems to be more to do outside during the evening - youth sport activities and gardening projects to name just a couple. Consequently, there seems to be less time for meal preparation. And, if the weather is warm, many of us have a smaller appetite and desire lighter fare for dinner. It is helpful to have a few light and quick summer meals up your sleeve, so that you can make dinner in just a few minutes.

Try out the following recipes from our World's Healthiest Foods database. These recipes require no or very little cooking - most of the preparation time (20 minutes or less) is spent assembling ingredients - so you won't be slaving over a hot stove, and they are hearty enough to serve as a full meal, especially when you are looking for something light. These recipes also take advantage of the abundance of fresh vegetables that are available during the summer months.


  1. Oriental Chicken Salad: The chicken necessary for this salad can be cooked ahead of time. This will cut the pre-meal preparation time by 10-15 minutes.
