Q Can you tell me the effects of deep frying foods such as French fries?

The fat used to deep fry foods such as French fries is susceptible to oxidation because of the high heat and exposure to oxygen and light. Because the food absorbs the oxidized oil that means you ingest this oil. Oxidation is a chemical change in the oil; when ingested the oil can damage the body's cells. The body has built in mechanisms to help counteract the ingestion of oxidized oil; however, this process is heavily nutrient dependent and requires that the body have an ample supply of plants compounds and essential nutrients to help neutralize the damage. The ingestion of deep fried foods are a key culprit in initiating a chain reaction of events that contribute to heart disease, insulin resistance and a host of other negative health effects; therefore, we recommend avoiding deep fried foods.
