Q Does dehydrated food lose nutritional value? When purchasing dehydrated food what should a person look for?

If a food is dehydrated in the oven using high temperatures then yes there will be some nutrient loss; however, there are food dehydrators that do use very low heat that you may consider if you prefer to preserve certain foods via dehydration. Dried foods, such as apricots, apples, raisins, and cranberries can provide important nutrients in the diet. However, they are also more concentrated in sugar and calories so be careful not to eat large quantities at one sitting; a small handful will do. We would recommend you avoid added preservatives whenever possible; many natural food brands now offer dried fruits without synthetic preservatives.
