Q I have been using almond milk as a milk substitute and enjoy it, but recently read that the carrageenan was not so good for you. Do you have any opinion or can you direct me to an info source?

We recommend choosing foods that are free of food additives. If you do choose foods with additives, we would recommend that they come from natural sources and that you still limit your intake of these foods. We believe whole, fresh foods are the ideal way to nourish the body.

We have not conducted research on carrageenan at this time, so we don't have any speciic information to share with you.

An alternative to prepackaged, processed almond milk products, of course, is homemade almond milk. Here is a recipe for homemade almond milk that I created for The World's Healthiest Foods: Essential Guide for the Healthiest Way of Eating, which is featured on page 537.

  • 1 cup almonds, soaked overnight
  • 3 pitted dates
  • Pinch of salt
  • 3 cups water

1. Combine almonds, pitted dates, salt, and water in a blender and blend on high for two minutes.

2. Strain through a cheesecloth-lined strainer into a large measuring cup or bowl. Store in a glass jar in the refrigerator for up to three days.
