Q I see in many recipes with cucumbers that they many times say to remove skins and/or seeds. If not organic I would remove the skins but I don't understand why I'd want/need to remove the seeds.

We recommend seed and pulp consumption from tomatoes and cucumbers, which do provide significant nutritional value. However, sometimes for culinary purposes, this portion of the tomato and cucumber may be discarded in a recipe. If you prefer not to discard the pulp and seeds, that would be fine. And yes, removing the skin of non-organic fruits and vegetables is important to reduce your exposure to pesticides and wax coating.
