Cauliflower Mashed Potatoes

From HM:



  1. Steam cauliflower until very tender.
  2. Cook leeks in 1 TBS olive oil
  3. Boil potatoes until tender
  4. Puree cauliflower w/a bit of butter & milk until smooth
  5. Mash potatoes w/butter, milk & cooked leeks
  6. Add cauliflower salt, pepper to taste. Mix well.
For extra flavor add grated smoky cheese into mixture Serve as a mashed potato dish - great for children that don't like veggies!!! They will never suspect a thing. My three gobbled it up.
