Twice Baked Sweet Potatoes

Gently Bake 4 Sweet Potatoes Cut in half lengthwise and scoop out the potato leaving a small amount still surrounding the skin. Mix the potato mixture with a small amount of maple syrup (or honey) and some crushed pineapple and a small amount of pineapple juice (or fruit of your choice!) Mix well and "restuff" the potato skin with the mixture. Put back in the oven to get lightly crisp on the outside. Easy, very little prep time and looks decadent!
