Hummus (Bean Dip, Greek Style)

From Carver:



Place the garbanzo beans in a food processor along with the other ingredients. Add a bit of water to thin if necessary (just to cover beans) and process until smooth. Spread the hummus into a shallow bowl, drizzle with olive oil, and garnish with fresh parsley. Serve chilled with olives, cucumber slices, or whole grain pita bread. Served all over the Mediterranean, but the addition of the cayenne makes it "Greek". Makes 4 cups. Excellent source of molybdenum, manganese, folate; very good source of dietary fiber.
