Oatmeal Pancakes

From PJ:



  1. Mix oats and buttermilk. Cover and refrigerate overnight. Mix egg and butter into oatmeal mixture.
  2. Mix dry ingredients, then mix into oatmeal mixture. Spoon batter onto hot griddle.
  3. Fruit, cinnamon, nutmeg, etc, can be added. Top with yogurt and cut up fruit.
(I found it was best not to store batter but to make all the pancakes. Leftovers made great snacks when toasted.)
