Avocado Salad

Here is a great avocado salad that I have been making all summer for company. I have gotten rave reviews from friends and my children love it as well. Not only is this delicious but makes a beautiful presentation as well.



Pesto recipe: Put all ingredients in food processor and blend until ingredients are mixed well.


  1. On a platter arrange quartered tomatoes.
  2. In a glass bowl put thinly sliced red onion. Cover with 1/2 juice of lemon and drizzle with olive oil. Mix.
  3. Cover the tomatoes with red onion mixutre.
  4. Half the avocados, take out pits and take out of skin. Put in bowl. Squeeze 1/2 lemon on avocados. Drizzle with olive oil.
  5. On a warm BBQ or stove top put avoacados on dome side up. Heat for about 1 minute. Take off heat and slice. Arrange sliced avocados over the tomato and onions.
  6. Put pine nuts over whole combination.
  7. Top off with pesto.
